Ingredients

  • 2 chicken breasts
  • 1 carrot
  • 1 zucchini
  • 1/4 each of green, red, and yellow bell peppers
  • 150 grams of mushrooms
  • 4 napa cabbage leaves
  • 150 grams of bean sprouts
  • 20 grams of cilantro
  • 6 garlic cloves

For the marinade

  • Pinch of salt
  • Ground pepper
  • 1/2 tablespoon light soy sauce
  • 1/2 teaspoon dark soy sauce
  • 1/2 tablespoon oyster sauce
  • 1 teaspoon Shaoxing cooking wine
  • 1 teaspoon cornstarch
  • 1 tablespoon vegetable oil

For the seasoning sauce

  • 2 tablespoons light soy sauce
  • 2 tablespoons oyster sauce
  • 1/2 teaspoon salt
  • Ground pepper
  • 70 ml water
  • 1 tablespoon cornstarch (diluted in 1 tablespoon water)

Preparation Steps

  1. Marinate the chicken:
    Cut two chicken breasts into thin slices. In a mixing bowl, combine the chicken with a pinch of salt, ground pepper, 1/2 tablespoon light soy sauce, 1/2 teaspoon dark soy sauce, 1/2 tablespoon oyster sauce, 1 teaspoon Shaoxing cooking wine, 1 teaspoon cornstarch, and 1 tablespoon vegetable oil. Mix well and let it rest while continuing the preparation.
  2. Prepare the vegetables:
    Cut all vegetables into chunks. Slice the carrot, zucchini, bell peppers, mushrooms, and napa cabbage leaves. Chop the garlic cloves and cilantro.
  3. Make the seasoning sauce:
    In a bowl, combine 2 tablespoons light soy sauce, 2 tablespoons oyster sauce, 1/2 teaspoon salt, ground pepper, and 70 ml water. Mix well. In a separate small bowl, dilute 1 tablespoon of cornstarch in 1 tablespoon of water.
  4. Cook the chicken:
    Preheat a pan over high heat and add 2 tablespoons of vegetable oil. When the oil is hot, add half the chopped garlic and briefly stir. Add the marinated chicken pieces, spread them well, and let them stir fry for one minute. Flip them over and cook for another minute, then stir for 30 seconds. Remove the chicken and set aside.
  5. Cook the vegetables:
    In the same pan over high heat, add 2 tablespoons of vegetable oil. Add the remaining chopped garlic and stir. When the garlic starts to brown, add the onion and carrots. Stir for 30 seconds, then add all the vegetables except the cilantro. Pour in the seasoning sauce and stir occasionally for 4 minutes.
  6. Combine and finish:
    Add the cooked chicken and 150 grams of bean sprouts to the pan. Stir for 30 seconds. Pour in the diluted cornstarch and stir for another 30 seconds until the sauce thickens. Add the cilantro, briefly stir, and turn off the heat.
  7. Serve:
    The Chicken Chop Suey is ready! Serve hot with jasmine rice for a delicious meal.

Tips

  • This dish is easy to make and can be adjusted according to the available vegetables you have on hand.
  • For best results, make sure your pan is hot before adding the oil and ingredients. This helps achieve that perfect stir-fry texture.
  • Don’t overcook the vegetables; they should remain slightly crisp for the best texture and flavor.
  • If you prefer a thicker sauce, you can add more cornstarch slurry. For a thinner sauce, add a bit more water.
